Since Scott has gotten home he has been one sick puppy. When I picked him up at the airport I knew he was sick, so I prepared myself for the worst. All he has wanted to eat are bananas so cooking him a fancy meal for him as a homecoming was out of the question.
I did make a pot of Chicken Tortilla Soup because it is amazingly delicious. After boiling the chicken in broth, I shred it and then doctor up the soup. I put in jars of spicy salsa, caramelized onions, cilantro and what ever other spices I have on hand - always differs. Then I garnish the soup with more cilantro, sour cream and deep fried corn tortilla strips. This soup is seriously awesome.
I have been double dipping and taking whatever I can. I think I may have dodged his sickness...
I did make a Sweet Potato Casserole because I am still not tired of Thanksgiving flavors. I heat it up really out and than serve it with a scoop of Egg Nog Gelato on top. Now that is good!
I have been drinking a lot of tea and I must say this is what I crave most evenings. It is very comforting to drift off to sleep with.
Stay healthy this season! No one likes being sick so prepare your body for it!
